Our Philosophy
The aim of our dinners is to display a diversity of philosophies, ideas, thought and emotions. We want to encourage you to delve into the depths of yourself in whatever way you choose. And whilst we celebrate all kinds of thinkers, the manner in which we cook and operate is governed by a certain way of life that we hold especially close to our being.
Primarily we are governed by three main notions:
Imperfection
Many of the worlds greatest restaurants commit themselves to a pursuit of perfection, this is especially notable in Japanese Cuisine. However we like to take a slightly different approach to food. Our commitment is to Imperfection. We see perfection as an elusive concept, and furthermore, an extremely disenchanting one. Every slice of meat, every piece of vegetable, every fillet of fish is different. They each have their own imperfections, their own idiosyncrasies. Our commitment is not to eradicate these imperfections in the pursuit of uniformity, rather it is to tend to them and accentuate them. We wish to respect our ingredients for what they are, nothing less and nothing more. Our aim is to create a truly imperfect dish, as only in that can true perfection lie. And it is only through this inconsistency of food that we can continue to deliver a consistency of excellence.
Meditation
From our experience we have learnt that the key ingredient to any phenomenal dish is a sense of attention, intuition and passion; to really be present in the cooking process. Above all it requires a state of meditation. We have found that a meditation upon food immensely enhances the quality and precision of any dish. But we wish to take this a little further; having seen its affect on the cooking process, we believe a similar approach to eating will further enhance the taste of the meal. That is why through a careful curation of ambiance with our ingredients, we seek to inspire a state of meditation within all our guests.
Nature
All our ingredients are natural, carefully selected from the bosom of mother nature. This transpires into the delicacy and natural essence of all our food. But natures part does not stop here. As philosophers we are constantly concerned with nature, and any opportunity to let it shine is golden. That is where the pop-up element is integral to the manner of our practice; It allows for a friendly, informal natural appreciation of food. We want you to be able to come and meet people from different cultures, jobs, backgrounds and connect over food. There is nothing more natural than people coming together in such a way, and there is no better way to do it than over the scent of natural deliciousness.
